I used a recipe from Eating Well a while back to teach myself how to make a tuna melt in the first place, but have made my own modifications. I don't care for mayonnaise, so I substituted Greek yogurt, nor do I care much for fresh parsley, so I sprinkled in my own dried herbs. I also threw in a dash of Adobo in lieu of shallots, but that's because I'm lazy. Alongside some steamed green beans with almonds, this was total comfort food made healthy.
Now, whenever I see portobello mushrooms, the same thing inevitably happens: I get that Portobello Road song from Bedknobs and Broomsticks in my head. I was totally humming it while I cooked dinner, so I wanted to stick the YouTube video of it in here, but I am embedding-challenged and I can't make it work.
