Sorry, but I had to bring back the Tenacious D song for an encore. With a 1/2 lb of kielbasa left in my fridge, I needed another recipe to use it up before it went schtank. Rachael Ray to the rescue, dawg. Corn & Kielbasa Chowder!
If you are at all a carnivore, or at least an occasional one like myself, I encourage you to try this while it's still cold outside. It is hearty and satisfying in a way that only meat and potatoes can deliver. (That's what she said.) I can just feel my inner German shrieking "JA!" in delight.
I will admit that when I first looked at the recipe, it actually looked a little too hearty and satisfying, to the tune of a tablespoon of butter and a cup of half and half. I'm all for whatever you want in moderation (or excess, in the case of dessert...), but if i'm going to also eat potatoes and real sausage and corn all in one bowl, something's gotta give. In my opinion, the recipe could do with a little less saturated fat, and since you can't cut that from the meat, I figured if I substituded EVOO for the butter and skim milk for the cream in the first place, I'd never miss it.
