The boyf is using the P90X workout system these days and new to the yoga aspect, so over the weekend we made a stop at Sports Authority to pick out some yoga props for him. While browsing the inventory, I spotted the foam rollers and got super excited because I have admired them on other blogs and have been fantasizing about how good it would feel on sore muscles. We played with it a bit in the store, but ultimately I decided to be strong and leave it be. I still managed to walk out of the store with one, however, so you do the math. :) And no, I didn't steal it.
Here I am putting it to good use right away:
AnyPB, on to the task at hand: dinner. I thought this one up after enjoying the cauliflower bake from a couple weeks ago because I loved the flavors so much, but I kinda wanted to reinvent its composition a bit, just for shiggles. From that was born a Tuna Melted Bread Pudding.
Sounds like gross, tastes like delicious.
- 150g broccoli florets
- 1/2 can solid white tuna (packed in water)
- 1 wedge Laughing Cow light swiss cheese
- scant 1/2 tsp garlic powder
- 1/4 tsp mustard powder
- splash Worstershire sauce
- 2 slices TJ's light whole wheat bread, cubed
- 1/4 cup liquid egg whites
- 1 oz reduced fat cheddar cheese, shredded
And here's how it becomes a puddin':
- Steam broccoli to the point of no return. Meanwhile, preheat oven to 350* and spray a small casserole dish with cooking spray.
- Flake tuna into a small mixing bowl and add broccoli once done, plus the Laughing Cow. Stir all together with a fork while still hot, breaking up large florets.
- Add garlic powder, mustard and Worstershire sauce and combine well.
- Stir in bread cubes.
- Spread in the bottom of the casserole dish; pour egg whites evenly over the whole mixture.
- Top with shredded cheese.
- Bake for about 20 minutes. Pop it out in one piece straight onto your plate!
I sprinkled on some crushed red pepper for color/kick, as well as a couple cranks of the pepper grinder.
It tasted right fine, but if I were to do it again, I would play with the proportions and maybe add some grated parmesan to the mix. And like three times as much cheese in general. :D
And for dessert, I'm still working on the big-arse batch of tapioca I made last week, but man is it killer. Enjoyed a la ramekin so it looks like more!

Aight, I'm off to play with my foam roller. Rollin' rollin' rollin'...now my butt is swollen...

i don't have a foam roller, but i might need to get one. i always need extra pillows ;-)
Hurray for P90X! The yoga is definitely challenging and I will sheepishly admit that I have been skipping it in favor of my other workouts because I'm so intimidated. Perhaps someday, I will be a yogi...
