Hot damn! The recipe I made tonight was really, really good, so it would be irresponsible of me not to post it! I found it on self.com: Polenta and Vegetables with Roasted Red Pepper Sauce. It sounds very fancy, but it was pretty simple. Just requires a little time (and by time I mean like, half an hour - I just don't do hours-long recipes after working an eight-hour day).
Polenta is made on the stove top with some parmesan stirred in, and then it gets spread in a pie plate and broiled. The roasted veggies are served on top of a couple slices of the polenta and a homemade (in the blender) red pepper sauce is poured over the top. It's low-cal, high flavor and vegetarian. Triple threat, homeslice!
Due to the raw garlic in the recipe, I am sporting some hardcore dragonbreath, though. Good thing the boyfriend's not around!
