The first usage of PB2 is officially in the books. Well, plus the date I shoved in the jar at 10pm last night as a vehicle to practice reconstituting PB2 in my mouth with my own saliva. :)
For breffast this morning, I prepared a pumpkin-yogurt cereal bowl nearly identical to one I made last week, minus pumpkin butter and plus PB2! You might recall last week that I commented after eating this combo that I wanted to pimp it out in a certain way, and it was in fact PB2 that I had on the brain. PB2 now officially stands for Pimp Bowl Squared.
Up in thurr:
- 1/2 cup Kashi Go Lean
- 1/3+ cup PB Puffins
- 1.5 tsp flax meal
- 1 tbsp pepitas (pumpkin seeds)
- 2 tbsp PB2
- 1/4 cup pumpkin
- 1/2 cup plain nonfat yogurt
I cannot tell a lie, the PB taste didn't come through quite as much as I'd expected. I think the bites with a stronger PB flavor came from the Puffins. Didn't stop breakfast from being delicious, I'm just sayin'. Unless you are a soggy cereal-hater, I recommend stirring all this up and letting it marinate for a few, as the last few bites that have fully soaked up the yogurt and pumpkin are always the best...it was like a glorious pumpkinny peanut buttery chunkadoodle mousse by the time I was finished (worth noting that it typically takes me like an hour to eat breakfast...I know, I'm a freak).
I am on peanut butter overload today, if such a thing is possible, because lunch was leftover Red Lentil Peanut Soup. I find it hard to hate on the PB, though, so it's all good.

pumpkinny peanut buttery chunkadoodle mousse - Um, yum. sounds like the perfect breakfast to me. I find that PB2 works better if I reconstitute first with a little water and then mix it in my yogurt.
An hour to eat breakfast? Really? That's great as I always kick myself for wolfing my down so fast. I'm really working on trying to eat slowly and enjoying my meals.
