I was very excited to learn that Lindsay of Happy Herbivore recently moved to New York City. I'm so glad she is joining what I now know to be such a cool group of local bloggers!
To celebrate, I decided to make one of her recipes tonight. For the longest time, I have been wondering what to do with the vegan chorizo in my freezer, so when I saw her post for Chili Cheese Chorizo au Gratin, I knew it was destiny.
It was amazing. I can't lie. I made only minor modifications to her recipe, based on the spices I had in the cupboard, but nothing different enough to merit listing what I altered.
For maximum sauce absorption, I spooned out a massive serving of this sweet potato casserole/behemoth atop a huge pile of raw zucchini noodles.
And then I ate. it. all.

Lindsay's recipes are freakin' killer!!! Most of all the baked goods. Homegirl can make some muffin recipes. For real. My mother still begs me for her sweet potato muffins all the time!!!
Chorizo is so yummy! I am totally going over to check out Lindsay's site to get that recipe because your dinner looks delish!
