Double Chocolate Chip Cookie Dough Vegan Ice Cream

What I’m trying to say is that this post won’t be remembered for things like “food styling” or even “good photography.”

But I do have a rockin’ vegan ice cream recipe for you. Only if you’re interested, of course. ;)

Considering this ice cream recipe involves Averie’s Chocolate Cookie Dough Ball recipe, you darn well ought to be interested. It’s all kinds of dangerously good!

Double Chocolate Chip Cookie Dough Ice Cream (Vegan)

Ingredients:

  • 2 cans coconut milk (one regular, one lite)
  • 1/2 cup agave nectar
  • 1 tsp vanilla extract
  • 6 tbsp raw cacao powder (or unsweetened cocoa)
  • 1/4 tsp xanthan gum
  • 1 recipe Chocolate Chip Cookie Dough Balls (not balled yet)

Directions:

  1. Prepare the chocolate chip cookie dough recipe per Averie’s instructions, but do not roll into balls. Place dough in the fridge.
  2. Meanwhile, combine all remaining ingredients in a blender and whiz just until well-incorporated.
  3. Process ice cream batter in your ice cream maker per manufacturer’s instructions.*
  4. Meanwhile, remove cookie dough from the fridge and pinch off bits according to how large you want your cookie dough bites in the ice cream.
  5. Add cookie dough bits to the ice cream batter about 5 minutes before turning off the ice cream maker, or according to the machine instructions.
  6. Freeze and enjoy!

*If you don’t have an ice cream maker, I recommend following steps 1 and 2, then placing the ice cream mixture in the freezer. Stir every 10-20 minutes or so until the mixture has reached soft serve texture, at which point you could stir in the cookie dough. Feel free to nosh as soon as you have achieved your desired ice cream thickness.

Clearly my first sample was too good to bother serving it neat and tidy in a pretty bowl and everything. I scooped a big blob out of the ice cream maker with my spatula and plopped it into a little Tupperware container for immediate consumption.

Actually, I’m done apologizing for the lame photos. You’re lucky I didn’t eat the whole batch straight from the ice cream maker, in which case I would have had nothing to photograph but the dark, cavernous (and empty…) depths of its frozen, rotating barrel.

Your turn: vanilla or chocolate ice cream to go with your chocolate chip cookie dough? “Other” is an acceptable answer as well. :)

As much as I love chocolate, I would probably pick vanilla ice cream. No wait, the chocolate looks too good. Wait...how bout both??!!!!

Thanks for the shoutout, Diana, and I love that you've put the cookie dough balls to great use!

Before I realized that 2 frozen bananas + 1/4 c almond milk + 1 Tbsp vanilla extract and 30 secs in the Vita was the quick n dirty method to ice cream, I was freezing 1 can coconut milk + sugar + vanilla extract and honestly, although it got crystalley and wasn't ideal, husband liked it well enough and it cured his dairy/sweet tooth situation. Without really been dairy, and not even that much sugar.

Sorry for the novel, but just wanted to tell those without ice cream makers or vita's/food processors that if you just freeze a can of coconut milk & sugar, it's a bastardized way, but a way nonetheless, to indulge.

And add the cookie dough balls of course!!

I'm sold. This is so much chocolatey goodness, I can't contain myself! I prefer both. Is that allowed? A mix of both vanilla AND chocolate. I like to mix a chocolate and vanilla Frosty together when I get one at Wendy's. Oh it's so good.

Haha, I think the pictures actually look pretty good! It make me drool, if that says anything.
I'd choose....vanilla, because I hate chocolate-flavored stuff.

I'm totally a vanilla + cookie dough girl. Used to be my fave ice cream back in the day. But I wouldn't refuse your creation either.

I'm sticking some almond milk in the freezer right now. I know...it's not the same.

I love vegan cookie dough ice cream. Unfortunately, I'm trying to cut back. I guess it couldn't hurt to eat a little, using vanilla as the base :-)

Sounds absolutely wonderful. First of all, your pictures of it are nice, and secondly, I've never seen such a thick, happy looking vegan ice cream! I'm not vegan, or even vegetarian, but I love when blogger's post this kind of recipe anyways, because I like trying all kinds of yummy foods.
Oh, and chocolate. Or peanut butter. Or raspberry.

You're making me choose?!?! I'll have to say...vanilla. I love chocolate, but I think plain vanilla ice cream is my favorite. So simple & classic!

Ice cream sure doesn't photograph well (I have the same problem), but who cares when you know how good it tastes?!
