Last night, the light in my kitchen burned out. Normally, changing light bulbs is completely within my handymannish capabilities, but unfortunately, the kitchen light fixture requires all kinds of dismantling and strange circular light bulb acquiring. My handy skills disintegrate quickly in the face of such projects. The bottom line: I needed a boy.
Having none at my immediate disposal, I’ve made do by putting a pole lamp in the kitchen until such time as a person handier than I reveals himself to me (it’s looking like next week at this point). Luckily, I was out for dinner last night and had no need of the kitchen’s facilities, but tonight was a different story. I could have done the logical thing and ordered takeout, but being the stubborn and stingy soul that I am (and armed with plenty of food, furthermore), I decided to “cook” something that I could manage blind, effectively.
I heated a spoonful of coconut oil in a large skillet and dumped a 1-pound bag of frozen stir fry vegetables in to soften. Once thawed, I poured in a leftover ladleful of Lindsay’s new recipe for East-Meets-West Gravy, gave it a stir and let it simmer for a few minutes.
All I needed was a fork to test the doneness of the veggies, and I was in business for dinner!
I love this gravy (recipe to be published in the upcoming Happy Herbivore cookbook), and it really was the perfect blend of Eastern flavors with the more Western concept of mushroomy “gravy.”

You're a better vegan cook than I! I'm very spoiled with all these amazing vegan restaurants in the city! The only thing I could cook in the dark would be already prepared foods. lol

yum! everything looks great, bummer about the lights being out. although it is fun when the power goes totally out and you have to live little house on the prarie style...with flashlights instead of lanterns, of course

My in-the-dark cooking would be pretty limited, but I'm pretty sure I could manage to nuke a sweet potato and find the spoon for some peanutty spread ;-)
Everything looks awesome.. I love mushrooms so that east meets west dish is right up my alley!!
In the dark I could roast some sweet taters.. I eat like 5 a week.

I feel your kitchen light pain, two in mine went out at the same time, of course the bulbs could only be ordered online and I didn't have any spares :-( A week later I was back in biz. The dishes look great!
oh yum!! Id love to try out that gravy recipe. Ive been into zuch noodles alot lately and that sounds like it would be so tasty over them. Sweeeet! Sorry about your light situation. Thats such a bust!
hhmm lets see, in the dark.. veggie stir fry. ahha ive had a lot of practice lately. And maybe Tomato basil bread pudding. I dont make it often but have been for years so its easy to do. Have a great day girl!!
Delicious looking veggies! I laughed at your question because I've had to make dinner in the dark before when the power went out in an icestorm. And what did I make?? Whole wheat wraps with hummus, sunflower seeds and arugula. Definitely my fav!

Oatmeal! Anything else that doesn't involve cutting or chopping. I can't cut food without injuring myself in the light, so it wouldn't be a good plan in the dark, I suspect :)

I'm super impressed! When Nick and I had no electricity for two days, we were lucky because we have a gas stove (like I'm assume you do). So we could still make whatever we wanted, but of course I wanted to keep the fridge shut for as long as possible, so we used freezer foods, such as the pre-cooked chicken I had in there! How convenient. We also made lots of pb&j. But your meal is very impressive. I should look into getting some coconut oil to use, just to switch things up a bit :)
Awesome cooking job in the dark! I always find that my frozen veggies get mushy when they defrost in the pan as they release the water -- how do you keep yours crisp?
