A friend of mine from the cretaceous period (aka High School) recently got back in touch with me (thank you, Facebook!) and asked me for my top five no-fuss recipes. Lately, I’ve been so busy testing Happy Herbivore recipes and coming up with new ones of my own, so I really had to stop and think!
Incidentally, I feel myself coming down with some kind of bug right now, so tonight I abandoned my recipe-testing plans in favor of one such no-fuss meal formula that has yet to fail me: the tortizza. I made sure to include this in my recommendations to my friend because it takes five minutes and is really reliable. You can see previous incarnations here and here.
Tonight, however, I used a new (to me) topping combo, having neither tomato sauce nor cheese (or even “cheese”) in the house.
Turns out this was both one of the tastiest and laziest topping mixtures I’ve combined yet! Proceed as follows:
- Preheat oven to broil.
- Place one Rudi’s whole spelt tortilla on a cookie sheet (my tortizza crust of choice, always!)
- Blob two-ish generous dollops of Sabra classic hummus upon said tortilla and spread to within 1/2 inch of the tortilla’s edge.
- Lick spoon.
- Distribute a layer of Sabra Sauteed Mediterranean Vegetables overtop the hummus.
- Broil for 5 minutes, then slice and serve alongside a tasty side of leafy greens.
- Don’t tell anyone you used the same spoon in both the hummus and sauteed veggies. <-- Oops.
Along with the generous bounty provided me by the Great Sabra Incident of ‘09 (yeah, nearly a year ago), I scored a coupon for $1.00 off any Sabra product. Said coupon was set to expire on December 31, so I cashed it in for something very much NOT hummus, thankyouverymuch, and I’m so glad I did! The sauteed “vegetables” consist predominantly of eggplant, so we know that that makes me a happy camper.
Also happy news is the fact that tonight’s hummus was scooped from the final remaining container from aforementioned incident! My freezer breathes a deep, icy sigh of relief at being freed from the duty of harboring refugee hummuses.
Being that I’ve eaten, done the dishes and blogged by 7:30pm, I’m thinking my immune system (and good night’s sleep) will thank me for keeping Rudi’s tortillas in the freezer for such nights as tonight, when I’m just not feeling my best and need a quick, yet healthy and homemade dinner.

yum tortizza! hummus on pretty much anything is amazing, but on a tortilla with delicious veggies, can't beat it. so funny: "cretaceous period (aka High School)"!! and i love the "lick spoon" step, always part of my recipes too

Did you find the Sabra vegetables in the hummus section? I just looked for it at Food Emporium but couldn't find. I LOVE eggplant, it would help me make easy dinners!
Also, did you know Sabra now has spinach & artichoke hummus??! Just bought myself some.
Lastly, I cannot believe it has been almost a year since the Great Sabra Incident '09 -- that means I have been reading your blog for a year! Time flies.
And lastly, I am not kitchen savvy and I don't know what people mean when they say broil. How is that different than bake?

My go to idea when I don't have groceries is scrambled eggs over whatever vegetables I have in the freezer and topped with salsa. Salsa can make anything taste good!
Sounds tasty! My stand by recipe is stir-fry: I throw whatever I have in the pan with some olive oil, maybe some peanuts and tofu or shrimp, and there you have it!

I totally forgot about tortizzas. Haha, I like that ;) I actually bought some tortillas to keep on hand exactly for that reason. I'd say they are my favorite easy dinner. A sandwich with whatever I can find is another good one. Or Annie's mac and cheese with extra veggies from the freezer (like peas) and maybe some meat.
