Homemade Brownie Points

Those are indeed the world-(or at least blog-)famous Happy Herbivore Black Bean Brownies! Lindsay has outdone herself with this treat.

Lucky for you, this recipe is not top-secret like most of the upcoming cookbook recipes I’ve mentioned over the past few months. It’s a Happy Herbivore signature favorite, and it’s about time you tried it too, if you haven’t already! I am late in making them for the first time myself, and needless to say, I’m yet another new disciple of the bean brownie kingdom. Just the smell of them baking is worth it!

I almost don’t care whether or not they’re healthy, since they taste so great, but in all reality they’re pretty much guilt-free! The stats for one brownie:

Nutritional Info: 85 calories, 1g fat, 16g carbs, 4g protein (without optional sugar)

I made them with adzuki beans instead of black beans, actually, since I had some on hand. I love adzuki beans and they’re used often in Asian desserts, so I associate them with sweets. My leftover beans were just begging to be made into brownies, naturally!

Adzukis are not without their own benefits. According to this source, they are an excellent source of iron, magnesium, potassium, zinc and folate.

So don’t waste anymore time sitting in front of my blog—get thee to the kitchen and make a batch! The beauty of this recipe is that you probably have everything you need already.

What’s your favorite dessert of all time? Mine has to be a warm brownie a la mode. Looks like my next project is to make some ice cream to go with my brownies!

I have blondies in my fridge still, or I'd be all over that! My favorite dessert of all time...hmm... I have a hard time turning down anything with chocolate and peanut butter.

zOMG i must try these! i've been seeing beans in desserts lately, usually brownies, but yours look the best i've seen so far! adzuki beans or however you spell them are great in sweets, totally japanese!

This post. Brownies look beyond!!!!!! good! WOW! The question is, do you taste the beans? I would surmise no, or you would have mentioned it. They look so moist and awesome! And yeah, go rock out the a la mode, too!

Fave dessert. Too hard to call. It changes all the time. I mean if i could eat buttercream frosting with gluten filled carrot cake or creme brulee...yeah, that would be nice. Given the current reality of my life...i would say my raw vegan brownies stand up nicely as do any of my raw balls. twss. or my raw apple crumble!

i used to bake bean banana muffins ALL THE TIME. and then i would eat the whole batch by lunchtime! :D

my dad loves adzuki beans too... he has been eating them for years!

I had to check out the recipe link just to make sure they actually had beans in them...so unique! They look awesome, though! My favorite dessert is anything with a combination of peanut butter and chocolate :)

Her BB Brownies are pure heaven!!! I bet they're delish with adzuki beans too, since they've got a slight sweetness to them.

My favorite dessert has to be something (anything) with chocolate and peanut butter. Most definitely.

ooooh yeah! Those brownies look AMAZING> Ive been eyeballin that recipe from happy heribivore for awhile. I think its about time I made some. Looks awesome. Really cool info about the adzuki beans too!

hhmm favorite dessert. Thats tough. Im thinking maybe a really awesome oatmeal cookie, or some peanut butter pudding. Tough call! If it has chocolate, PB or oatmeal in it. Im so there though. Have an awesome day hon!

oh gosh...my all-time favorite dessert?? In all honesty, blueberry pie! It's from heaven!! ;-) (with apologies to all chocolate lovers...I'm not a huge chocolate fan)

I LOVE healthy indulgences! these look fantastic, and the health stats are even better, wow. I agree with you, brownie a la mode is the perfect dessert, especially when the brownie is all nice and warm. Of course there's also carrot cake, and chocolate cake, and no bake cookies...shall I go on?!

I've seen these brownies everywhere in blogland! It sounds like the black beans make them really fudgy. Yum. My favorite dessert ever is probably my grandmother's chocolate chip bundt cake.

You know we eat tahini as a dessert in Lebanese cuisine and it is made of sesame seeds so using beans is not such a stretch!
