Saturday night, I dined chez Katherine, who had invited me over to spend a low-key evening of board games and munchables with her and her Huz.
Naturally, being Katherine and the Huz, they had only the tastiest of tasty foods, such as chips and guacamole…

The board game in question was an awesome birthday gift from my sister. It’s called “Foodie Fight,” and it’s more or less Trivial Pursuit for foodies, though it’s far more compact and you’ll actually be able to finish a game before we elect a new President.
Being a guest in a fellow blogger’s home, I had to contribute something to the munchings, naturally. Having decided on dessert, I had a bit of a think and came up with something I’m pretty frickin’ proud of, to be honest.
No-Bake Pecan Pie (Vegan)
Ingredients:
- 1/2 lb (1/2 box) whole wheat graham crackers
- 4 tbsp coconut oil
- 1 lb medjool dates, pitted
- 1/4 cup non-dairy milk
- 1/2 cup raw pecan halves, plus more for topping
Directions:
- Combine grahams and coconut oil in a food processor and pulse/blend until you have a mixture the consistency of wet sand.
- Divide mixture between two 8-inch pie plates. Pat down with the back of a spoon until the crumbs are evenly spread flat across the bottom and up the sides. Place crusts in the freezer.
- Combine dates and milk in a food processor and blend smooth, stopping to scrape down the sides as necessary. Add pecans and pulse until pecan bits are spread throughout the filling.
- Remove the crusts from the freezer. Divide filling mixture between the two crusts (try to do this in big, heaping spoonfuls). Spread the filling very gently (it will be thick and sticky) with a back of a spoon until it covers the crust’s bottom evenly.
5. Decorate with additional pecans. You’re done!
Makes 2 pies
I recommend storing these pies in the fridge (if they don’t get eaten right away, for some reason). It stays together better that way, making it easier to slice.
For someone who considers herself a rather untalented baker, I was feeling pretty smug for having skirted the whole “baking” issue commonly associated with pies. And they even tasted good! With only a couple ingredients! System = beat.
Who wants to turn on the oven in warm weather, anyway? Perhaps this is not a common association, but I think summer when I think of pecan pie, and not having to bake it makes the idea all the more appealing.

The pie...OMG so you must have been reading my mind from, umm...thanksgiving. I set out to create a no bake pecan and created a no bake pumpkin instead. Next year, I dont need to reinvent the wheel, i can just use your recipe now! Yes, amazing when a recipe comes together with simple ingreidents and no fuss! Well, easy for me to say no fuss :)
Question, 1 lb of dates. That's the TJs sized tub. Each pie gets half the tub, basically. Dates are hard b/c of the pits, size per each date, etc. Loosely vs tightly packed, etc. Half tub per pie?
And the pecans. It seems like such a scant measure, 1/2 c or was it 1/4 pecans to be ground with the dates, and then that's essentially split between 2 pies? Garnishing though with extras..I am just making mental notes here and your comment form is on a separate page from your post...memory not working...:)

Ok so for the pie, correct - each pie gets half the tub of dates, which is marked as 1 lb, so alternatively, you could just buy 1 lb of dates from the bulk bins if you're not going to TJ's. To be clearer, maybe in the ingredients I should have said 1 lb dates and then put in the instructions to pit them, because the 1 lb weight is before pitting.
For the pecans, feel free to add more to the filling mix if you like; I kind of just wanted some pecan bits to be in the filling mixture, other than what I was gonna put on top, so I just pulsed em through until there were some pieces distributed throughout, and 1/2 cup whole pecan halves was enough for me. Definitely wanted it to be lighter on the pecans though since I was planning on putting so much on top.

Pecan pie is my faaaaaavorite. But, because it's basically sugar and butter, I only have it once a year at Thanksgiving. Thank you for giving me something I can make whenever I want and not feel guilty!
Seriously, the pie was life changing. The Huz and I had the second half on Sunday and Monday nights. SO GOOD!
Btw, the wine was made by The Huz parents' housekeeper. She's also the great creator of some damn fine Portuguese chorizo and totally ridic sweet bread. I'll be sure to call when we get another delivery ;-)

Since I'm especially obsessed with crushing dates and other objects together and calling them crusts lately, this seems to fit the bill perfectly. Why oh why don't I have graham crackers in the cupboard? That is a situation that needs to be remedied!

I hate to be the picky vegan, but technically your pie is not vegan because of the honey graham crackers. Honey (as an animal byproduct) is generally not considered vegan.
Other than that, your food looks delicious!

You're right,the grahams in the photo are not vegan--but you are certainly free to buy vegan graham crackers should you choose to make the recipe.
