Freestyle: Vegan MoFo Edition

In case you haven’t heard, it’s Vegan MoFo! Otherwise known as the Vegan Month of Food, this is the time of year when we celebrate all things vegan, and as much as possible.

And that’s only barely scratching the sweet surface! Obviously, I’m partial towards dessert, but there is an infinite amount of deliciousness lurking out there in the vegan blog world, and now is the time to dig in! Trust me when I say I’ve been celebrating Vegan MoFo on the daily…which is nothing out of the ordinary, but if you need some evidence, please to refer back to my previous post singing the rice cooker’s praises. It has been churning out more than curry rice in the way of vegan fare—in fact, the bibimbap pictured in that post is the only thing it has made that was NOT vegan!

I should make my stuffed kabocha that I made for a guest post at Gena's blog. I'm still very proud of it, hee hee.

But...the last time I had vegan fare, I wasted $15 of my precious money on shit that left me hungry. Boooo....

And I linked your coconut rice recipe in my post today. I took at stab at caribbean coconut rice and it came out...awesome!

I have no vegan dining partners. That makes me sad.

But seriously, check out Averie's coconut rice. I am SO picking up some garbanzo beans tomorrow just so I can make it. It's that awesome looking.

I'm always in for anything involving the words parfait :) I've been cooking up a few vegan meals- including a butternut squash and tomato soup. Delicious! Happy weekend

Well, I'm not celebrating Vegan MoFo persay, but I am consistently having pumpkin pie peanut butter oatmeal this week, which is vegan if you use soy milk or water! And it's fantastic!

Also, I want to make those PB cookie dough balls. Bad.

Aww, you're so sweet to include me! Eh, well, you're so sweet anyways! Always have been :).
My veganmofo "thing" is the "hug-something-vegan month I'm doing, where people "hug" a favorite vegan food or recipe. Hopefully it'll get people excited about vegan things hehe :).

Oh yeah, I have had plenty of vegan foods lately! My dinners have been close to vegan...with tons of kale and spaghetti squash recently. I have also been doing the vegan Daiya cheese! IT's so tasty, even though it's missing calcium, which is a bummer.
